Steel Cut Oatmeal Cookies

So, in the wee hours of the night, instead of "Make Me Something Chocolatey", I heard "I need some cookies". After a little discussion on what ingredients were on hand, I came up with these. I didn't make these though, I just listed off amounts and ingredients as babygirl and I sat and watched. Hubby did a great job and these were heaven with a ice cold glass of coconut milk :)

1c white whole wheat flour
1c steel cut oats (I blended into a oat flour, leaving some texture to the oats)
1tbs corn starch
1/2tsp baking soda
1/4tsp salt
3/4c Earth balance
1/2 banana
1/4c sucanat sugar
1/4c cane sugar
1/4c almond milk

Preheat oven to 350 degrees
Sift together all dry ingredients except oat flour. Once mixed, add oat flour and set aside.
Blend all remaining ingredients together and then add to dry ingredients.
Place mounds of dough on oiled baking sheet or one covered with parchment paper and bake approximately 10 minutes or until cookies are golden brown. These cook quickly, so don't over bake.
Do yourself a favor and have these warm from the oven with ice cold coconut or almond milk :)

  1. I heard about oatmeal cookies with steel cut oats a few months ago. I think the impending winter weather is a good reason to try them out!

  2. Sarah, it was my 1st time using the steel cut and I think I'll make them this way from here out. They would be perfect warm from the oven on a chilly night!
