Vegan Apple Pie with Whole Wheat Crust

This is day 11 of Vegan MoFo and I'm really having fun with it!
Over the weekend, I was in the kitchen cooking and as usual, babygirl was playing in the spice cabinet. She sometimes hands me things from there to look at or smell and last night she handed me the cinnamon to smell. I took a whiff and just like that I was craving apple pie! Funny how that happens. We had some apples on hand and all the other ingredients, so I figured I would whip one up.

Crust
2 3/4c white whole wheat flour
1/2tsp salt
1tbs cane sugar
4tbs chilled Earth balance
4tbs spectrum vegan shortening
1/3c ice water

Combine all ingredients except water in a food processor or by hand. Mix until small crumbles form. Add in ice water little by little to form a dough(you may not need all water). Turn out onto floured surface and kneed into a ball. Divide dough into 2.

Roll out each ball to fit pie plate.
Lay one of your rounds in pie plate and trim to fit. Bake for 5 minutes or until just starting to change color, not completely done. Set aside.

Filling
5 medium apples
1tsp nutmeg
1tsp cinnamon
1tsp ginger
1tsp vanilla
1tsp lemon juice
1/4c sucanat sugar
1 tbs corn starch
1tbs Earth balance

Slice apples uniformly. Toss apples with spices, vanilla, lemon juice, sugar and cornstarch. Put in pie pan and spread out.

Divide natural balance in small dollops all over the top.
Top with remaining crust and close. You can slice openings in the top or use a fork to poke a few holes. You want to make space for steam to escape. Brush with coconut oil and bake for 30 minutes or until light brown. Remove from oven and let rest before cutting. This gives the inside a chance to cool down and firm up. If you don't care and just want to eat it already, grab a spoon and dig in!
We had ours with coconut milk based vanilla bean ice cream.

  1. Apple pie is the best with ice cream! Your crust looks really nice for being whole wheat - I've got to get my hands on that white whole wheat stuff!
