Eggplant Chips and Eggplant Jerky

As I get back into dehydrating more, I'm starting to find out that dehydrated snacks are some of babygirl's favorites. So far, everything I've given to her from the dehy, she gobbles up and asks for more. Awesome :)

Chips
2 medium sized eggplant
3tbs liquid aminos
1tbs oil (I used organic sunflower)
1/2tsp sesame oil
1/2tsp garlic powder
1/2tsp onion powder
1tsp agave syrup or sweetner of your choice
1/2tsp liquid smoke
Wash and slice eggplant 1/4inch thick.
Mix remaining ingredients together.
Dip both sides of eggplant in marinade and set aside.

Lay on dehydrator trays and dehydrate at about 125 for about an 1hr and then reduce to 115 for 5hrs or until crispy.

These were so good topped with the cheese crackers I made! Talk about not being able to eat just one. Good news is, they are totally healthy for you, so eat up!


Jerky
For the jerky, I use the same amount of marinade, but only 1 eggplant.
I also add 1tbs sesame seeds.
I let them all sit in the marinade until it's soaked up. This doesn't take very long, because eggplant are like sponges.
Dehydrate on 125 for about 3 hrs and then reduce to 115 until desired texture is reached. They should be chewy, but not tuff.

  1. YUM! a dehydrator is seriously top pf my Christmas list... all the possibilities are so exciting :) I would never have thought of eggplant though, these look delish. I bet my little boy would love them as your wee one does :)

  2. It's a good way to get food in the kiddies :) I would like to get a excalibur dehydrator, but for now, my Nesco with temp. control does just fine!

  4. I think the kind of marinade you use helps and a little sweetner goes well with the eggplant. Otherwise, it can be a bit bitter.

  5. Hi! I'm looking at trying this recipe out very soon. I have some eggplant in the fridge that needs using ASAP. Just wondering how long these recipes would last for once made?

    Also, do they need to be stored in the fridge, or can they be left at room temperature?
