
These candies are wonderfully chewy without sticking to your teeth like conventional caramels. All the flavor without all the bad ingredients. A gift tin or a decorative jar full of these would be a wonderful gift!
I made these at the same time as my caramel apples for a family get together.
Makes Approximately 16 pieces
1/2c raw cashews
1tsp lacuma powder (Caramel, malty flavor that adds natural sweetness)
1tsp mesquite powder (Has a rich and smokey molasses type flavor. Great to balance blood sugar levels.)
1/2c pitted medjool dates
1tsp vanilla extract
pinch of sea salt
Grind cashews to a powder. Add in lacuma, mesquite and salt. Make sure all the dry ingredients are well incorporated.
Mix in dates and vanilla in food processor or by hand. I like to do it by hand. You can form pieces one by one or form into block and put in the fridge for a couple of hours, then cut into pieces.

I wrapped them individually in pieces of wax paper.

I served them along side some raw vegan caramel sauce and sliced apples.
