Cranberry Chia Seed Scones

Christmas morning, often times I make cinnamon rolls. I leave them out to rise the night before and pop them in the oven on Christmas morning.
This year I made scones. We did'nt spend Christmas morning at home and I was also pretty cooked/baked out by the time the weekend rolled around, so I figured scones would be alot simpler.
I was visiting Happy Go Lucky Vegan and saw a recipe for scones she posted. They looked delicious and the ingredients were great, so I gave them a try.

We left the night before, so I pre-mixed all the ingredients except for the Earth Balance and liquid. I put the mix in a bowl and packed the Earth Balance along side it. In the morning all I had to do was mix it all up and bake. I didn't have blueberries, so I used dried cranberries and added some chia seeds for extra goodness.
These were so simple to put together and so good!
