New Years Day Dinner 2012

Collard Greens for Wealth
Corn Bread and Vegan Ham Roll for good measure :)

Black Eyed Peas
I prepared them this way, except I left out the carrots and kale this time.

Collard Greens
1 bunch collards, de-stemmed and washed
2c veg broth
1 garlic clove
onion powder
seasoned salt
liquid smoke

Put all ingredients in a pot, cover and simmer for about 20 minutes or until greens are tender.

Vegan Ham Roll from Vegetarian Plus
It was our first time trying it and it was tasty. It was an impulse buy at Whole Foods. We made 1/2 of it with the plum glaze it came with. Instead of cooking it as is, I cut it in half lengthwise to cook. Once it was almost done, I sliced it, added the glaze and a bit of water to the bottom of the pan. I returned it to the oven just to allow the glaze to thicken up.
Ingredients in Ham Roll:
water, soybean fiber, soybean protein, wheat protein, soybean oil, tapioca starch, sea salt, raw cane sugar, white pepper, natural malted red rice, vegan flavor.
Glaze:
plum, apricot, water, agave syrup.

    I'll post the ingredients when I get home. They were quite simple though.
    I tried to find a link to it on the web, but on the vegetarian plus site, they only have the vegetarian one, not the vegan one. Maybe the vegan one is a newer product.
