In my dairy eating days, spanikopita was one of my favorite greek dishes. The combination of spinach and tangy feta all wrapped up in flakey phyllo dough is delicious!
To make it, I used KitchenOpera's recipe with a few changes. I especially liked how she prepped the fresh spinach for the dish and it worked out wonderfully for me.
My changes are below.
-zest of 1 small lemon
-1/4c of coconut oil & 1/4c evoo mixed for brushing pastry sheets
-sriracha to taste instead of cayenne
The almond feta all cooled and ready to go.
