Jack O Lantern Strawberries



I wanted to surprise the littles with some fun treats on Halloween Morning. I came up with these 2 quick treats!


Large Organic Strawberries
Medjool Dates
Organic Grapes

I used a pairing knife to poke holes for the eyes and slices for the mouths. Insert pieces of both the dates and grapes for the eyes and mouths.

Pumpkin Bread Oct, 31st 2015

This is a great way to use the thick pumpkin left from making Pumpkin Spice Syrup.

16oz pumpkin butter
2tbs maple syrup
1/4c almond milk
1tsp vanilla
1/4c ground flax seed
1/2c coconut oil, melted

1 1/2c whole wheat flour
1/2c oat flour
1/2c whole oats
1/2tsp sea salt
1 1/2tsp baking soda
1tsp baking powder

Mix first 5 ingredients together and set aside. Mix remaining ingredients together and add to wet ingredients. Mix until just incorporated. Transfer to loaf pan lined with parchment paper or greased and floured.
Bake at 375 for 20 minutes or knife in center comes out clean and the top is golden brown.

Enjoy alone or with

Pumpkin Spice Latte and Frappucino


Pumpkin Spice Latte


Make this Pumpkin Spice Syrup and then use it for both these yummy drinks!

Pumpkin Spice Latte
6oz almond milk or nut milk of your choice
1/4c Pumpkin Spice Syrup
1/4c to 1/3c brewed coffee
*optional, dash of pumpkin pie spice and cinnamon

Put all ingredients into glass jar with lid or blender. Shake or blend until well incorporated and frothy.

Pour over ice and Enjoy!

Pumpkin Spice Frappucino
Pumpkin Spice Frappucino

1/3c Pumpkin Spice Syrup
8oz almond milk or nut milk of your choice
about 2c of ice
* I made these with no coffee for the littles. You can add 1/3c to 1/4c brewed coffee and dash of pumpkin pie spice and cinnamon.

Put all ingredients in blender and blend until slushy.


Enjoy!

Pumpkin Spice Syrup

It's that time of year, Pumpkin Spice Everything!
The syrup is good for drinks, use in cooking, baking or drizzled over bisquits, pancakes and waffles.

1c pumpkin
1c coconut sugar
1 1/2c water
3tsp pumpkin pie spice
1tsp cloves
1tsp vanilla extract

Put everything except vanilla in a pan, stir and bring to boil.
Lower heat and stir occasionally until you have a thick syrup consistency. Don't over cook or you'll wind up with a thicker pumpkin butter type of sauce.


Strain through thin sieve or nut milk bag. If you use a nut milk bag, let cool first.

Add vanilla to your syrup and mix in.

Bottle your syrup for use in all kinds of applications and use the pumpkin butter left over for recipes like this Pumpkin Bread, Pumpkin Spice Latte or Frapuccino.
