Gingerbread Cookies with Cranberries and Walnuts

These chewy cookies are great for a cookie exchange or to bring to a holiday party!
I had some orange zest and pre ground clove/allspice mix from making Gingerbread, so I put it to use in this cookie recipe for a get together the next day. I know zesting citrus can be a pain, but it definitely pays off in flavor for these yummy cookies!

Makes 30 cookies.
Preheat oven to 350 degrees. Prepare baking sheet with layer of parchment paper.

1/2 butter
1/4c coconut sugar
1/4c maple syrup
1/4c molasses
1tbs ground flax mixed with 2tbs water
1/4c almond milk
1tbs packed orange zest
1tsp baking soda
1tsp ginger
1tsp cinnamon
1/2tsp ground cloves
1/2tsp ground allspice
1/4tsp salt
1/2 c chopped walnuts
1/2c cranberries

Cream together butter, sugar and orange zest.

Whisk in maple, molasses, flax and almond milk. Set aside.
Mix together all remaining ingredients, except walnuts and cranberries.
Mix dry ingredients into wet along with nuts and cranberries until just combined.

Drop rounded tablespoons on the cookie sheet.
*Optional, flatten into rounds with the back of a wet spoon.
Bake for 10 minutes at 350 degrees.
