Our lime tree is so abundant right now and it shows no signs of slowing down! Most of them we use in our water and tea everyday. I wanted to make a sweet treat with them and thought a lime cream pie would be a delicious way to add some freshness to the holiday time!
This lime pie is very creamy with a great tang from the fresh juice and zest. Very decadent!
1/4c fresh lime juice
zest from 4 small limes
1/2 tsp vanilla extract
7oz sweetened condensed coconut milk
1/4c powdered coconut sugar
1 14oz can coconut milk, chilled hard
1 prepared pie shell. You can purchase or make using this recipe.
Mix the first 4 ingredients together and set aside.
Whip the last 2 ingredients together until you have a firm peak.

Fold whip cream into lime mixture until incorporated.
Pour into prepared pie shell.
Chill until firm and then Enjoy!
