Vegan Family Meals, Tofu Sushi Rolls

I'm on a roll...get it!
Tofu Sushi Rolls was Lunch and Dinner this week, as requested by my son, S. We kept it simple with just the tofu and an eel type sauce, but sometimes we get wild and add tempura veggies and avocado. E and I really enjoy elaborate combinations like fresh sliced red pepper and sautéed portabella mushroom. The list of possibilities is endless!

Instructions on the video, Ingredients below!

Sushi Rice or Jasmine Rice
Sushi Vinegar or 1tbs apple cider vinegar plus 1 tbs agave or cane sugar
1 block of tofu
coconut oil
Nori sheets or Seaweed snack sheets

Ingredients for the sauce
aminos or soy sauce
ketchup
molasses
grated ginger
apple cider vinegar
maple syrup
mushroom seasoning
water
